METHOD

Pour essential olive oil into soup pot. Add onion and prepare until translucent, about 5 minutes. Add celery, carrots, and sprouts. Prepare 5 minutes more. Add all remaining ingredients, cover, and produce to some boil. Reduce heat and simmer for 25 minutes, or until vegetables are tender. Garnish with grated Mozzarella dairy product if preferred.
